Analytical approaches to determination of total choline in foods and dietary supplements

Abstract: Choline is a quaternary amine that is synthesized in the body or consumed through the diet. Choline is critical for cell membrane structure and function and in synthesis of the neurotransmitter acetylcholine. Although the human body produces this micronutrient, dietary supplementation of choline is necessary for good health. The major challenge in the analysis of choline in foods and dietary supplements is in the extraction and/or hydrolysis approach. In many products, choline is present as choline esters, whi… Show more

“…In cases of choline insufficiency, diseases such as liver fattening, renal impairment, and even cancer may emerge (Garrow, 2007). Studies have shown that problems in liver, kidneys, and pancreas and disorders of memory and growth might be encountered in chronic choline insufficiency (Phillips, 2012 During this study, quail meat rich in choline, which is very beneficial considering healthy nutrition, was obtained, thus allowing people to take advantage of it. In the literature, there is no previous research related to quail meat rich in choline.…”

“…It enables the transportation and burning of fats, which are also related to its preventive effect in fatty liver. In experimental animals, choline insufficiency caused liver fattening and loss of hepatocytes, atherosclerosis and heart diseases, growth and bone development anomalies, and impairment in kidney functions (Phillips, 2012).…”

“…Ch is not electroactive; it lacks fluorescence and does not absorb UV radiation. Determination of Ch can be performed by using microbiological assays, gas chromatography [5], capillary zone electrophoresis [6], and high performance liquid chromatography [7] (see the review [8]). The above-mentioned methods provide good repeatability, high sensitivity, and low limit of detection.…”

“…Since choline that synthesized by the organism is limited, the additional quantities of choline need to be obtained from vitamin formula, infant food and sport drinks. Choline has become a commonly food additive which was widely used in our daily life ,. Choline is now considered as a safe food additive.…”
