Antioxidant, antimicrobial activity and mineral composition of low-temperature fractioning products of Malus domestica Borkh (common Antonovka)

Abstract: The low-temperature fractionation of fruit Malus domestica Borkh (Common Antonovka) has been performed. We obtained by fractionation the biologically active products that are the dehydrated concentrate of juice and the powder of pomace fibers. Use of low temperature minimizes biological value losses during processing. These fractions of fruit Malus domestica Borkh (Common Antonovka) are experimentally studied. It is found that the fractions have high antioxidant activity and include bioflavonoids and organic a… Show more

“…Apple pomace contains flavonoids, phenolic acids, carotenoids, and anthocyanins that have various anti-microbial and anti-viral activities ( Kuznetsova et al, 2017 ; Barreira et al, 2019 ; Zardo et al, 2021 ). Polyphenolic bioactives from apple pomace showed antimicrobial activity against Paenibacillus larva (American foulbrood in honeybees) ( Giménez-Martínez et al, 2020 ).…”

“…Polyphenolic bioactives from apple pomace showed antimicrobial activity against Paenibacillus larva (American foulbrood in honeybees) ( Giménez-Martínez et al, 2020 ). Lipophilic compounds from different species of Malus (apple pomace) consist of saturated, unsaturated, and polyunsaturated fatty acids, along with polyphenols, phytosterols, and four homologs of tocopherol were found to exhibit inhibitory effects on the growth of a few Gram-positive and Gram-negative bacterial cultures such as Escherichia coli, Pseudomonas aeruginosa , Enterococcus faecalis , Streptococcus pyogenes, Bacillus cereus , Micrococcus luteus , Bacillus subtilis , and Staphylococcus aureus ( Table 2 ; Alberto et al, 2006 ; Fratianni et al, 2011 ; Zhang et al, 2016 ; Kuznetsova et al, 2017 ; Radenkovs et al, 2018 ; Zardo et al, 2021 ). Phenolic compounds isolated from different extraction solvent varies in antimicrobial activities ( Zhang et al, 2016 ; Zardo et al, 2021 ; Santos et al, 2022 ).…”

“…Regarding polyphenols, it is known that old and local apple varieties were characterized by a higher content of polyphenols and stronger antioxidant properties than commercial varieties, which enjoys a high growth rate, but unfortunately, these new varieties are characterized by a very low content of bioactive compounds, including polyphenolic compounds (Kuznetsova et al, 2017;Oszmiański et al, 2019). The consumption of such apple varieties may reduce the polyphenolic compounds in the dietary supply (Iacopini et al, 2010;Donno et al, 2012).…”
