Antioxidants and antioxidant methods: an updated overview

Abstract: Antioxidants had a growing interest owing to their protective roles in food and pharmaceutical products against oxidative deterioration and in the body and against oxidative stress-mediated pathological processes. Screening of antioxidant properties of plants and plant-derived compounds requires appropriate methods, which address the mechanism of antioxidant activity and focus on the kinetics of the reactions including the antioxidants. Many studies evaluating the antioxidant activity of various samples of res… Show more

“…In this assay, ABTS is oxidized to its blue-green radical cation (ABTS •+ ) usually by 2,2′-azobis(2-amidino-propane)dihydrochloride (AAPH) or potassium persulfate (K 2 S 2 O 8 ) [ 86 ]. Antioxidant activity is measured as the ability of antioxidant to inhibit the absorbance of the ABTS radical chromogen, which has a characteristic long-wavelength absorption spectrum at 734 nm.…”

“…It is also worth noting that care is needed to avoid artefacts when studying and evaluating antioxidant effects of bioavailable anthocyanins in model organisms and the human body, as findings can depend on the chosen marker, the sensitivity of method to detect ROS and to measure oxidative damage, or even on the changes in plasma urate concentrations [66]). It is not the aim of the present review to analyze the suitability of methods to evaluate the antioxidant activity of anthocyanins; thus, for the complexity of the matter, one could consult several excellent reviews [66][67][68][69][70].…”

“…They exhibited strong antioxidative properties that resulted in health-promoting effects such as in attenuating osteoporosis, cardiovascular, and neurodegenerative diseases [ 110 , 111 , 112 , 113 ]. The direct antioxidative properties of vitamin E include its ability to donate hydrogen atom from its chromanol ring that neutralizes free radicals [ 114 ]. In this process, tocopherol and tocotrienol become oxidized to form stable tocopheroxyl- and tocotrienoxyl-radicals.…”
