Applicability of multifunctional preprocessing device for simultaneous estimation of spreading of green tea, withering of black tea and shaking of oolong tea

Abstract: BACKGROUND Preprocessing technologies of fresh tea leaves have a great influence on tea quality. A multifunctional preprocessing device for tea raw materials has been designed and utilized as a novel item of equipment to synchronously meet the process needs of spreading of green tea, withering of black tea and shaking of oolong tea. RESULTS The preprocessing parameters of fresh tea leaves for spreading of green tea, withering of black tea and shaking of oolong tea were optimized by orthogonal experiments. Sens… Show more

“…According to the findings mentioned above, the optimal spreading parameters for green tea are as follows: overall, 70% humidity, 25°C temperature, and 8 h (Ren et al., 2020). Perhaps 60% humidity, 28°C temperature, and 8 ± 0.5 h of withering time are the optimal conditions for processing high‐quality black tea, significantly improving the fragrance, taste, and other characteristics of black tea (Ntezimana et al., 2021; Tomlins & Mashingaidze, 1997; Tram, 2015).…”

“…There are many literatures about the processing of green tea, which greatly promotes the improvement of tea quality (Chen & Ni, 1999; Ren et al, 2020; Yu et al, 2007). Lu et al investigated the effect of processing technology on the quality of Titian Xiufeng tea, including spreading, fixing, and rolling, which indicated the importance of parameter and technological process for improving tea quality (Lu et al, 2008).…”

“…Tea is one of the healthiest beverages consumed across the world (Ren, Fan, He, Li, & Tang, 2020; Zareef et al, 2019). The tea infusion is rich in various nutrition for human healthy, such as tea polyphenols, caffeine, free amino acids and vitamin, which has the effect of anti‐oxidation, hypotensive, anti‐carcinogenic, and protection against cardiovascular disease (Jiang, Yu, et al, 2019; Zhang, Santos, et al, 2019; Zhou, Zhao, et al, 2019).…”
