Aqueous Zein Dispersions

Abstract: Hurd et al. ( 8) found at least 6 moles of 1-butene for each mole of 2-butene produced in the pyrolysis of 2-pentene. At least part of the 2-butene found in run 4 probably resulted from the isomerization of 1-butene or from secondary reactions.

“…Given that alkaline media treatments ensure the presence of negative charges in the zein structure, NaOH solution of pH 11 was selected for the solubilization of zein, as this medium is also favorable for the synthesis of many LDH [40]. However, it is reported in the literature that alkaline treatment in zein provokes a deamidation of the glutamine amino acid, together with the possible formation of alkali salts of the phenolic-hydroxyl groups in tyrosine [43][44][45]. According to the electrophoresis results (Figure 3), the alkaline treatment of zein breaks the protein in smaller fractions of protein size between 14 and 10 kDa, although the presence of the Z19 and Z22 monomers and α-zein dimers was still evidenced (Figure 3a).…”

“…Currently, its main use is as an animal feed. The major drawback of using corn gluten meal in foods is that it is very insoluble in water (Ofelt and Evans, 1949;Russell and Tsao, 1982). There is, therefore, motivation to try to increase its solubility.Enzymatic hydrolysis has been used to favorably modify the functional properties of proteins, such that the hydrolysates could be incorporated into foods for their flavor and functional and nutritional value (Constantinides and Adu-Amankwa, 1980).…”
