Abstract: RESUMOAs raízes da batata doce, além dos carboidratos complexo de baixo índice glicêmico, é rica em fibras, ferro, vitamina C e potássio, além de apresentar alto teor de vitamina E e açucares, também são excelentes fontes de carotenóides, vitaminas do complexo B e cálcio desempenhando um importante papel na alimentação, sendo muito consumida por atletas.
