Various types of vinegars have been developed as interest in their health benefits has increased. In this study, we prepared Jeju citrus blended vinegars (CBVs) by mixing premature mandarin vinegar and mandarin vinegar, with mandarin vinegar used as a control. The physicochemical properties of the vinegars, including pH, total acidity, and sugar content was determined. Moreover, antioxidant, anti-obesity, and anti-aging activities of the vinegars were investigated. Physicochemical analysis revealed that the CBVs had a pH similar to that of mandarin vinegar, whereas CBVs with relatively high premature mandarin vinegar content showed higher acidity and lower sugar content (p < 0.05). Moreover, the antioxidant activities and phenol contents of CBVs were significantly higher than those of mandarin vinegar (p < 0.05). Meanwhile, CBVs showed significantly decreased intracellular triglyceride, lipid accumulation, and anti-obesity related gene levels (p < 0.05), thereby highlighting their anti-obesity activity. In addition, CBVs showed anti-aging activity by increasing cell viability and cell lifespan, while decreasing the expression of senescence-related genes under H2O2-induced oxidative stress. Therefore, CBVs may be useful as a functional food with antioxidant, anti-obesity, and anti-aging effects in various food fields.

Methicillin-resistant Staphylococcus aureus (MRSA) and resistant Escherichia coli (rE.coli) infections can spread rapidly. Further they are associated with high morbidity and mortality from treatment failure. Therapy involves multiple rounds of ineffective antibiotics alongside unwanted side effects, alternative treatments are crucial. Apple cider vinegar (ACV) is a natural, vegan product that has been shown to have powerful antimicrobial activity hence we investigated whether ACV could ameliorate these resistant bacteria. The minimum dilution of ACV required for growth inhibition was comparable for both bacteria (1/25 dilution of ACV liquid and ACV tablets at 200 µg/ml were effective against rE. coli and MRSA). Monocyte co-culture with microbes alongside ACV resulted in an increase in monocyte phagocytosis by 21.2% and 33.5% compared to non-ACV treated but MRSA or rE. coli stimulated monocytes, respectively. Label free quantitative proteomic studies of microbial protein extracts demonstrated that ACV penetrated microbial cell membranes and organelles, altering the expression of key proteins. This resulted in significant reductions in total protein expression, moreover we could only detect ribosomal proteins; 50 s 30 s, enolase, phosphenol pyruvate and the ATP synthase subunit in rE. coli. Elongation factor iNOS and phosphoglycerate kinase OS were the only proteins present in MRSA samples following ACV treatment.

The present study was designed to investigate the preventive effect of propolis, bee pollen and their combination on Type 2 diabetes induced by D-glucose in rats. The study was carried out by feeding daily two concentrations (100 and 200 mg/Kg BW) of propolis or bee pollen (or their combination to normal (non-diabetic) and diabetic rats for a period of 16 weeks. In vivo biochemical changes associated to diabetes are induced by drinking a solution containing 10% of D-glucose (diabetic rats). The in vitro antioxidant activity was also evaluated and the chemical composition of propolis and bee pollen extracts was determined by UHPLC-DAD. Phytochemical composition of propolis and bee pollen revealed the presence of several natural antioxidants, such as hydroxycinnamic acids, hydroxybenzoic acids, flavonoids, flavan-3-ols and stilbens. The major antioxidant compound present in propolis was Naringin (290.19 ± 0.2 mg/Kg) and in bee pollen was apigenin (162.85 ± 17.7 mg/Kg). These results have been related with a high antioxidant activity, more intense in propolis extract. In rats, the administration of D-glucose had induced hyperglycemia (13.2 ± 0.82 mmol/L), increased plasmatic insulin levels (25.10 ± 2.12 U/L) and HOMA-IR index (14.72 ± 0.85) accompanied with dyslipidemia, elevation of hepatic enzyme levels, and a change in both serum renal biomarkers and plasmatic calcium. The coadministration of propolis and bee pollen extracts alone or in combination restored these biochemical parameters and attenuated the deleterious effects of D-glucose on liver and kidney functions. Furthermore, these effects were better attenuated in the combined therapy-prevented diabetic rats. Hence, it is possible to conclude that propolis and bee pollen can be used as a preventive natural product against diabetes induced dyslipidemia and hepato-renal damage.
