Caracterização físico-química e aminas bioativas em vinhos da cv. Syrah I: efeito do ciclo de produção

Abstract: Na maioria das regiões vitícolas brasileiras o período de colheita das uvas coincide com a época de maior intensidade pluviométrica, condição que afeta negativamente a qualidade dos vinhos obtidos, em especial a dos vinhos tintos. A ocorrência sistemática de dias chuvosos ou com alta nebulosidade, aliada às temperaturas ambientais elevadas prejudica não só a maturação das uvas, mas também a sua sanidade devido à ocorrência de inúmeras podridões dos cachos. “…Putrescine is a catabolic product of the ornithine or arginine pathways, which can be converted to spermidine and form spermine, these three are interconversible molecules (Russo et al, 2010). Mota, Amorim, Fávero, Gloria, and Regina (2009) studied wines and reported high putrescine levels in the winter in two harvests. For the authors, one of the reasons for putrescine accumulation in the grape occurred because the grapes were cultivated during the dry season and underwent water stress or because there was potassium deficiency, evidencing that this amine may be related those factors other than the hygienic conditions.…”
