Carotenoids as food colorants

Abstract: The carotenoids are a chemically related group of pigments which occur widely and abundantly in nature. Fruits, vegetables and vegetable oils, dairy products, leaves, shrimp, lobster, the plumage of exotic birds, all contain carotenoids. Chemically, the carotenoids may be divided into carotenes, made up of carbon and hydrogen only, and oxycarotenoids containing oxygen in addition to carbon and hydrogen. The use of carotenoid-containing plant extracts for coloring foods has been practiced for centuries and cont… Show more

“…Many carotenoids are being produced by chemical synthesis, which yield products that are pure and cheap (Gordon and Bauernfeind, 1982). Several microorganisms, including fungi, bacteria and algae, are able to produce carotenoids naturally 984 R. Verwaal et al (Johnson and Schroeder, 1996).…”

“…Human and other animals obtain carotenoid from the diet and are unable to synthesize it themselves. Carotenoid are extensively used as color-enhancing additives to animal feed and also applied as food colorants (Gordon et al 1982 ). It is produced by Arthrobacter (Reddy et al 2000 ) and Streptomyces (Dharmaraj et al 2009 ).…”
