Characteristics of Chitosan from White Leg Shrimp Shells Extracted Using Different Temperature and Time of the Deasetilation Process

Abstract: Chitosan is a white amorphous solid chitin, and of high biological and mechanical characteristics.Chitosan production is divided into two stages. First is chitin isolation (deproteination, demineralization, and depigmentation), and second is deacetylation of chitin to chitosan. This research was aimed to determinethe characteristic of chitosan isolated from the shells of the white leg shrimp using different temperatureand time in the deasetilation process. The FTIR test results showed that the chitin group was … Show more

“…However, NaOCl is more often used because it produces a pure white color which indicates a complete depigmentation process. The use of acetone in the depigmentation process was not perfect if the color produced was yellowish white (Setha and Rumata, 2019). The most suitable concentration of NaOCl reduces pigment to a maximum of 4%.…”

“…According to the Ministry of Maritime Affairs and Fisheries [10], shrimp production in Indonesia reached 1,217,859 tons in 2021. Shrimp is a commodity with high economic value that is commonly processed but leaves the shell and head underutilized, ranging from 35-50% of their body weight [11]. The deacetylation of chitin into chitosan is an alternative method of handling shrimp waste.…”
