Chemical Composition, Nutritional Value, and Safety of Cooked Female Chaceon Maritae from Namibe (Angola)

Abstract: Despite being highly appreciated and consumed, the nutritional value of Chaceon maritae from Namibe (Angola) had never been studied. In the present work, edible tissues (muscle, ovaries, and hepatopancreas) of boiled female C. maritae caught off Namibe coast in two distinct seasons were analyzed in terms of proximate chemical composition (fat, ash, protein, and moisture), fatty acid and amino acid profiles, cholesterol, essential minerals (macro and trace) and toxic elements. Results showed that, in both seaso… Show more

“…They are one of the most important seafood with healthy and highly nutritious meat. Crabmeat is rich in digestible proteins, free and essential amino acids, unsaturated fatty acids (3 fatty acids), vitamins, minerals (iron, calcium, zinc, phosphorus, selenium, and potassium), and glycosaminoglycans (Mandume et al, 2019;Wang et al, 2018c). The legs, claws, and viscera of the crab are also potential sources of high-quality protein, lipids, antioxidants, calcium, enzymes, and pigments with health-promoting properties (Tremblay et al, 2020).…”

“…The amino acid composition is determined in various animal and plant matrices. Mandume et al (14) determined the nutritional value of the meat of Chaceon maritae. The results showed that the protein of Chaceon maritae is of high quality and can be considered a good source of irreplaceable amino acids.…”
