“…However, the classification is not entirely adequate for conglutin /3, which, in contrast to conglutin 0" remains quite soluble when all the salt is removed at neutral pH, although it precipitates at pH 4.5 (Blagrove and Gillespie, 1975). Yet another of the proteins, conglutin 0, referred to as an albumin in early studies, is again seemingly extracted quantitatively only by salt (Restani et aI., 1981: Lilley, 1986a), but remains soluble on dialysis of the salt extract against water; more recent studies have shown that conglutin 0 may indeed be extracted by water alone (Salmanowicz andPrzybylska, 1994: Salmanowicz, 1995) and thus behaves more like a classical albumin. However, low ionic strength and/or extremes of pH have been shown to lead to irreversible dissociation or denaturation for certain components (Blagrove and Gillespie, 1975): maintaining native structure is obviously important where a critical study of solubility and subunit structure is to be undertaken.…”
