Contour Diagram‐Based Evaluation on Logistics Stability of Table Grapes under Variable Temperature

Abstract: Table grapes are inherently perishable and unstable, tending to deteriorate after harvest. The logistics stability of table grape that is closely related to product quality tends to decline. This paper proposed a contour diagram‐based graphical method in order to evaluate the logistics stability visually and easily under variable temperature. Firmness was selected as the indicator of table grape quality and shelf life prediction. Two kinds of experiments were designed to evaluate the proposed method by compari… Show more

“…The TTT is too general to expose more information about the quality change (and only effect in frozen foods by now), while chemical kinetic model and bacterial model are too complicated to be applied and understand easily. For this reason, Ma et al (2016) derived contour diagram theory from the research of Kwolek & Bookwalter (1971) for the storage stability evaluation from 0-order or 1-order kinetic models which is similar with the theory of TTT, but the rules in their research cannot been broadened to the growth of bacteria at ambient temperature, such as Baranyi and Roberts model, Gompertz model etc. Therefore, in this paper, one common theorical basis for the of relationship between TTT with other models would be established and interpretated, for widening the use scope of TTT in non-frozen foods.…”

“…Cold-chain foods' quality relies on logistics stability, particularly with regard to temperature (Hsiao et al, 2017;Ma et al, 2016;Shashi et al, 2018). As official interest in the traceability and quality of food products increases worldwide (Poniman et al, 2015;Thomas et al, 2017), rigorous controls and rolling checks on the temperatures in cold-chain food logistics systems have become commonplace (Chen and Schonfeld, 2017;Chen et al, 2018;Fikar, 2018;Ma et al, 2017).…”
