“…Aspergillus fumigatus was able to grow on purified B-type procyanidins from apples. Oxygenase from this fungus modified the terminal unit of procyanidin B2 to form a metabolite with a lactone moiety (Contreras-Dominguez et al, 2006).…”

“…(+)-Catechin, (À)-epicatechin, phloridzin, chlorogenic acid and quercetin were obtained from Sigma Aldrich Co (St. Louis, MO). Procyanidin B2 and p-coumaroylquinic acid were obtained as described by Contreras-Dominguez et al (2006) and Benoit et al (2006), respectively. Epicatechin benzylthioether was a gift from J.-M. Souquet (INRA, UMR SPO, Montpellier, France).…”

“…Considering the fact that the degradation of tannins is based on catalytic reactions of enzymes produced during growth, it could be deduced that the enzymes needed for GAC accumulation are the same as tannin-acyl hydrolases. CAT accumulation is attributed to hydrolysis of CTAN (procyanidins); they are not hydrolyzed by 'classical tannases' (Contreras-Dominguez et al 2006), with initial degradation steps carried out by mono-or dioxygenases. But other studies are needed to further characterize the degradation of CTAN (Aguilar et al 2007); however, in this paper high levels of CAT were produced since semiarird plants are CTAN-rich sources.…”
