Chicken meat, a staple of the Indonesian diet, undergoes extensive examination for contamination across diverse regions, yielding different findings. Using a comprehensive meta-analysis approach by combining previous researchees, making the results are widely applicable and understandable. This research aimed to obtain prevalence of bacterial contamination and pathogenic agents in both raw chicken meat and processed chicken products in Indonesia. The investigation occured in two sequential phases: first, a systematic review, including literature retrieval from databases like Google Scholar, Cross Ref, Pro Quest, PubMed, and Science Direct, followed by literature screening and data extraction. Then, in the second stage was conducted a meta-analysis. Effect size measurements, primarily the proportion/prevalence of bacterial contamination, are calculated using the random-effects model via the DerSimonian–Laird method. Analysis of 44 studies from 25 carefully selected literature sources shows that the prevalence of bacterial contami-nation in Indonesian chicken meat and its processed derivatives is 32.8% (95% CI: 21.6-44.1, I2 = 99.49%). To address the noticeable heterogeneity, sub-group meta-analyses was performed, which was categorized by sample type, the specific contaminating bacteria, and the sampling location. The sub-group meta-analysis based on sample type highlights processed chicken meat as having the highest prevalence at 47.8%. When broken down by bacterial type, contamination rates reveal E. coli (45.3%), Salmonella sp. (30.6%), Campylo-bacter sp. (20%), and L. monocytogenes (15.7%) as significantly influencing the prevalence of bacterial contamination in Indonesian samples. Geographically, traditional markets emerge as the primary source of bacteria-contaminated samples, with a prevalence rate of 31.2%.

Air merupakan unsur penting dalam kehidupan dan tidak satu pun makhluk hidup di dunia ini yang tidak membutuhkan air. Kesalahan pengolahan air minum dapat menyebabkan kemungkinan peluang terkontaminasi oleh bakteri Escherichia coli, yang menjadi salah satu penyebab timbulnya penyakit diare. Tingkat morbiditas diare berada pada tingkat pertama sebagai penyebab kematian pada anak secara global dan penyakit diare termasuk kedalam 10 besar penyakit teratas di wilayah kerja Puskesmas Mokoau, kota Kendari. Penelitian ini bertujuan untuk mengetahui keberadaan bakteri Escherichia coli, mengidentifikasi kualitas fisik dan mengidentifikasi sumber air minum di Rumah Makan Wilayah Kerja Puskesmas Mokoau, Kota Kendari, Provinsi Sulawesi Tenggara Tahun 2021. Penelitian merupakan penelitian deskriptif kuantitatif dengan pengujian laboratorium. Hasil penelitian kualitas bakteri menunjukkan dari 9 sampel air minum 4 (44,4%) diantaranya terdapat bakteri Escherichia coli dan 5 (55,5%) sampel air minum tidak mengandung bakteri Escherichia coli. Syarat fisik menunjukkan dari 9 (100%) sampel air minum semuanya memenuhi syarat fisik berdasarkan Permenkes RI No. 492/Menkes/Per/IV/2010 karena sampel air minum tidak berbau, tidak berwarna, tidak keruh dan tidak berasa. Untuk sumber air minum yang digunakan oleh pemilik rumah makan yaitu berasal dari depot. Berdasarkan hasil penelitian dapat disimpulkan bahwa secara mikrobiologi tidak memenuhi syarat karena terdapat kandungan Escherichia coli pada beberapa sampel air minum dan syarat fisik sampel air minum pada rumah makan yang diteliti memenuhi syarat. Untuk sumber air minum berasal dari depot, tapi tidak semua rumah makan mengambil di depot yang sama.

This study aimed to analyze the microbial contamination of chicken meat and its pH value from traditional markets in Banyuwangi, East Java to ensure public health. A total of 30 raw chicken meat samples from three traditional markets were used in this study and examined for the presence of Escherichia coli and Salmonella spp. E. coli and Salmonella spp. were identified using Gram staining, culturing, and biochemical tests. The Most Probable Number (MPN) method was used for coliform and E. coli. Measuring the pH value of chicken meat was carried out after purchasing the meat and 24 hours after storage at cold temperatures. The results showed coliform contamination in all samples with an average of >1100 CFU/G with E. coli contamination of 20% (6/30), exceeding the maximum recommended limit. Furthermore, the identification of Salmonella spp. in all samples showed negative results. Chicken meat pH value decreased with the length of postmortem time; immediately after purchase (0 hours), the pH value was 5.78 ± 0.26, and after 24 hours of storage, it raised 6.02 ± 0.28. In conclusion, there was high coliform contamination out of 30 raw chicken meat samples taken from some traditional markets in Banyuwangi. Furthermore, E. coli contamination was as much as 20%, and Salmonella spp. was negative.
