Abstract:The current study investigated the effect of selected local herbal plants on the quality and physical organoleptic taste of cow milk. In total, three medicinal plants namely Solanum schimperianum hochst (Zitoun), Olea europaea L (Hadeq) and Acacia etbaica schweinf (Kasha) were chosen.
