Public and consumer pressure for assurances that farm animals are raised humanely has led to a range of private and public animal welfare standards, and for methods to assess compliance with these standards. The standards usually claim to be science based, but even though researchers have developed measures of animal welfare and have tested the effects of housing and management variables on welfare within controlled laboratory settings, there are challenges in extending this research to develop on-site animal welfare standards. The standards need to be validated against a definition of welfare that has broad support and which is amenable to scientific investigation. Ensuring that such standards acknowledge scientific uncertainty is also challenging, and balanced input from all scientific disciplines dealing with animal welfare is needed. Agencies providing animal welfare audit services need to integrate these scientific standards and legal requirements into successful programs that effectively measure and objectively report compliance. On-farm assessment of animal welfare requires a combination of animal-based measures to assess the actual state of welfare and resource-based measures to identify risk factors. We illustrate this by referring to a method of assessing welfare in broiler flocks. Compliance with animal welfare standards requires buy-in from all stakeholders, and this will be best achieved by a process of inclusion in the development of pragmatic assessment methods and the development of audit programs verifying the conditions and continuous improvement of farm animal welfare.

Preventing the establishment of ectoparasitic poultry red mite (Dermanyssus gallinae) populations is key in ensuring welfare and egg production of laying hens and absence of allergic reactions of workers in poultry facilities. Using the Hazard Analysis and Critical Control Point method, a panel of experts identified hazards and associated risks concerning the introduction and spread of this mite in poultry facilities. Together we provide an overview of possible corrective actions that can be taken to prevent population establishment. Additionally, a checklist of the most critical control points has been devised as management tool for poultry farmers. This list was evaluated by Dutch and British poultry farmers. They found the checklist feasible and useful.

This article describes a Delphi-based expert judgment study aimed at the selection of indicators to identify the occurrence of emerging mycotoxin hazards related to Fusarium spp. in wheat supply chains. A panel of 29 experts from 12 European countries followed a holistic approach to evaluate the most important indicators for different chain stages (growth, transport and storage, and processing) and their relative importance. After three e-mailing rounds, the experts reached consensus on the most important indicators for each of the three stages: wheat growth, transport and storage, and processing. For wheat growth, these indicators include: relative humidity/rainfall, crop rotation, temperature, tillage practice, water activity of the kernels, and crop variety/cultivar. For the transport and storage stage, they include water activity in the kernels, relative humidity, ventilation, temperature, storage capacity, and logistics. For wheat processing, indicators include quality data, fraction of the cereal used, water activity in the kernels, quality management and traceability systems, and carryover of contamination. The indicators selected in this study can be used in an identification system for the occurrence of emerging mycotoxin hazards in wheat supply chains. Such a system can be used by risk managers within governmental (related) organizations and/or the food and feed industry in order to react proactively to the occurrence of these emerging mycotoxins.
