Development of a mathematical model to predict the growth of Pseudomonas spp. in, and film permeability requirements of, high oxygen modified atmosphere packaging for red meat

Abstract: Typically, packaging films used for modified atmosphere packaging are multi-layered structures with high barrier properties, but these are difficult to recycle and therefore unsustainable. Lower barrier properties would allow a reduction in barrier layer thickness and therefore a reduction of raw materials or enable the use of alternative materials like bioplastics. The aim of this paper is to propose a model that determines the minimum permeability requirements to maintain shelf-life of red meat in high oxyge… Show more

“…Lipid oxidation may be accelerated in the presence of oxygen, and the accelerated lipid oxidation could increase the production of MDA to elevate the TBARS [ 34 ]. In addition, a packaging material with a high oxygen vapor transmission rate could increase the contact between oxygen and the meat product to have an effect on the TBARS [ 35 ]. Across all storage periods, the TBARS did not vary significantly according to the type of packaging material ( p > 0.05).…”

“…Moreover, H-CO 2 and H-O 2 gas concentrations have even been applied for atmosphere storage of animal products because of their antibacterial effect. [100,101] Application of H-CO 2 and H-O 2 in atmosphere storage is worth consideration for a variety of products.…”

“…This is because lidding films are commonly around 50 µm thick; films above 200 µm thickness are difficult to produce on a blown film line and once the thickness is above 1 mm, the material becomes a sheet (Dixon, 2011) (Figure 2). For metric two, the shelf-life was compared using a predictive model on MATLAB (R2020a) (Hutchings et al, 2021). In brief, the code calculates the minimum required carbon dioxide permeability, above which the permeability begins to shorten shelf-life.…”
