Development of an Improved Method to Determine Saturated Aliphatic Aldehydes in Docosahexaenoic Acid‐Rich Oil: A Supplement to p‐Anisidine Value

Abstract: p‐Anisidine value (AV) is an important and commonly used index to determine the second oxidation statue of edible oils, but it sometimes cannot reflect the concentrations of all the secondary products, such as saturated aldehydes. An improved method for the determination of saturated aliphatic aldehydes (SAA) in docosahexaenoic acid (DHA)‐rich oils is developed in this study. This method reduces the aldehyde 2,4‐dinitrophenylhydrazone adducts (DNPhydrazones) using 2‐picoline borane, which can eliminate the ana… Show more

“…One milliliter of 0.25% p‐anisidine solution (p‐anisidine in acetic acid) was added to 5 mL of oil solution. The samples were stored away from light for 10 min, and absorbance was measured at 350 nm (Zuo et al., ). The p‐anisidine value was calculated as Eq.…”

“…Tompkins and Perkins [1999] found relatively high values of correlation coefficients between the anisidine value and the content of hexanal, t-2-octenal, t,t,-2,4-decadienal in partially hydrogenated soybean oil used for frying potatoes. However, as noted by Zuo et al [2017], this value does not reflect the content of saturated aldehydes. Furthermore, Ye et al [2020] claim that flavouring agents may influence this values.…”

“…The p -AVs tended to depend on the USFA content (p<0.05). High USFA contents have been shown to be the major factor influencing p -AV in samples (Zuo et al., 2017). Our p -AV data also demonstrated a relationship between the amount of USFA and the production of aldehydes and ketones during storage.…”
