ObjectivesThe purpose of this study was to develop an educational model regarding food safety and nutrition. In particular, we aimed to develop educational materials, such as middle- and high-school textbooks, a teacher’s guidebook, and school posters, by applying social cognitive theory.MethodsTo develop a food safety and nutrition education program, we took into account diverse factors influencing an individual’s behavior, such as personal, behavioral, and environmental factors, based on social cognitive theory. We also conducted a pilot study of the educational materials targeting middle-school students (n = 26), high-school students (n = 24), and dietitians (n = 13) regarding comprehension level, content, design, and quality by employing the 5-point Likert scale in May 2016.ResultsThe food safety and nutrition education program covered six themes: (1) caffeine; (2) food additives; (3) foodborne illness; (4) nutrition and meal planning; (5) obesity and eating disorders; and (6) nutrition labeling. Each class activity was created to improve self-efficacy by setting one’s own goal and to increase self-control by monitoring one’s dietary intake. We also considered environmental factors by creating school posters and leaflets to educate teachers and parents. The overall evaluation score for the textbook was 4.0 points among middle- and high-school students, and 4.5 points among dietitians.ConclusionThis study provides a useful program model that could serve as a guide to develop educational materials for nutrition-related subjects in the curriculum. This program model was created to increase awareness of nutrition problems and self-efficacy. This program also helped to improve nutrition management skills and to promote a healthy eating environment in middle- and high-school students.

Educational modules can be effective in educating and motivating adolescents to participate in physical activity (PA). This paper describes the development and validation of a PA educational module for use in an obesity intervention programme, CEria Respek Gigih Aktif Sihat (CERGAS). The present study was conducted in three phases: Phase I was composed of needs assessments with four focus group discussions to elicit adolescents’ opinions regarding module content and design, Phase II was the development of the PA module, while Phase III was content and face validation. A content validity index (CVI) was used to assess content validity quantitatively, with a CVI of more than 0.79 being considered appropriate. The needs assessments indicated that content of interest to adolescents included: the benefits of exercise; exercise techniques; ways to increase PA and how to stay motivated. Attractive graphic design was determined as a way to draw the adolescents’ attention. The module covered five topics: “Let’s Be Active”; “Exercise and Fitness”; “Staying Safe during Exercise and Physical Activity”; “Planning for Success” and “How to Overcome Sedentariness and Get Moving”. The module was found to have good content validity (mean CVI = 0.85). Expert members made suggestions to improve the module. These suggestions were then accepted, and the module was modified accordingly. We concluded that the module has good content validity and can be used to improve PA knowledge amongst CERGAS participants.
Objectives: This study was performed to examine dietary habits, life stress, and nutrition knowledge among high school students in Gyeonggi area.Methods: A total of 431 high school students (210 males, 221 females) in Gyeonggi area participated in this study from November to December of 2011. The study was a questionnaire-based survey that included dietary habits, dietary attitudes, life stress, and nutrition knowledge.Results: Body weight, height, and body mass index were all higher in male students than in female students (P < 0.001, respectively). For dietary habits, the average score (P < 0.01) and scores for considering combination of food groups (P < 0.05), eating green and orange vegetables (P < 0.05), eating meat, fish, eggs, or beans everyday (P < 0.05), drinking milk (P < 0.001), and eating seaweed (P < 0.01) were higher in male students than in female students. For dietary attitudes, the average score (P < 0.05) and scores for the five items were significantly different between male and female students. Male students showed a significantly lower nutrition knowledge score than female students (P < 0.05). Life stress score of students largely was attributable to academic factors, and female students showed higher stress score for academic, personal, and surrounding environmental (P < 0.05, respectively) factors than male students. Dietary habit score (P < 0.01) and nutrition knowledge score (P < 0.05) in female students as well as dietary attitude score (P < 0.05) in male students were negatively correlated with life stress score. Dietary habit scores in male and female students were positively correlated with dietary attitude score (P < 0.01, respectively). Need for nutrition education was significantly higher in female students than in male students (P < 0.05). Conclusions:This study provides basic information on dietary habits, dietary attitudes, life stress, and nutrition knowledge according to sex and suggests gender-specific practical nutrition education programs to address undesirable dietary habits and attitudes in students with higher stress levels.
