Salmonella enterica subsp. enterica plays a role as a foodborne pathogen worldwide. The consumption of contaminated pork has been associated with human salmonellosis and the increase in antimicrobial resistance among Salmonella from pigs and pork products is a concern. A total of 225 Salmonella isolates from feed mills, the lairage environment, and the intestinal contents of pigs and carcasses were investigated for their antimicrobial susceptibility. A MIC for ciprofloxacin was screened by agar dilution, and antimicrobial resistance genes were investigated by PCR assays. Among the tested isolates, 171 (76%) showed resistance to at least one antimicrobial agent, and 91 (40.4%) were multiresistant. Resistance occurred most frequently to tetracycline (54.5%), sulfonamides (39.6%), and streptomycin (33.7%). Thirty-two (94.1%) nalidixic acid-resistant isolates exhibited decreased susceptibility to ciprofloxacin. The resistance genes found were blaTEM (ampicillin), tet(A) (tetracycline), tet(B) (tetracycline/minocycline), sul1, sul2, and sul3 (sulfonamides), catA1 (chloramphenicol), floR (florfenicol/chloramphenicol), strA and strB (streptomycin), aph(3')-Ia (kanamycin), aac(3)-IIa and aac(3)-IVa (apramycin/gentamicin), aadA variant (streptomycin/spectinomycin), and dfrA1 (trimethoprim). Salmonella isolates from pig feces and carcasses displayed a higher frequency of resistance to most antimicrobials tested than isolates from feed mills. Common resistance gene profiles were found in isolates from the lairage and the intestinal content of pigs and carcasses, demonstrating that resistance genes selected on farms may be found in pork.

Control of Salmonella spp. in food production chains is very important to ensure safe foods and minimize the risks of foodborne disease occurrence. This study aimed to identify the prevalence and main contamination sources of Salmonella spp. in a pig production chain in southern Brazil. Six lots of piglets produced at different farms were tracked until their slaughter, and samples were subjected to Salmonella spp. detection. The obtained isolates were serotyped, subjected to antimicrobial resistance testing, and pulsed field gel electrophoresis (PFGE). Salmonella spp. was detected in 160 (10.2%) samples, and not detected in pig carcasses after final washing or chilling. Among the 210 Salmonella spp. isolates, S. Typhimurium was the most prevalent (n = 101) and resistant to at least one antimicrobial. High resistance rates were detected against tetracycline (83.8%), chloramphenicol (54.3%), and trimethoprim-sulfamethoxazole (33.3%). The isolates that were non-susceptible to three or more classes of antimicrobials (n = 60) were considered multidrug-resistant (MDR), and isolates resistant to up to six of the tested antimicrobials were found. PFGE allowed the identification of genetic diversity and demonstrated that farm environment and feed supply may be sources for the dissemination of Salmonella spp. along the production chain. The results revealed the sources of Salmonella contamination in the pig production chain and highlighted the risks of antimicrobial resistance spread.

In a study conducted by Pellegrini et al (2015) in four Brazilian feed mills, it was concluded that the equipment in use was not designed to perform continuous cleaning and sanitation, since most of them do not allow access to hygiene and have surfaces or points of accumulation of dirt along the production line.…”

Resumo: O artigo caracteriza e analisa a implantação de BPF e APPCC e os benefícios percebidos na indústria Abstract:This article aimed to analyze the internal and external perceived benefits of the implementation of GMP and HACCP in factories of the feed industry, and the difficulties perceived during deployment. A survey research was conducted through a questionnaire which was sent to the companies. Sixty units responded the questionnaire. Descriptive statistics, correlation tests and clusters were applied for data analysis. The cluster analysis identified three groups of companies, which differed from each other mainly by their size and certification of food safety standards. While product quality is a general requirement of the sector, the understanding that the adoption of programs to guarantee food safety is important for the quality of feed provided to the animals and essential for the quality of food of animal origin (meat, milk, eggs) does not seem to be a unanimous perception of the industry, considering that 26.7% of the sample does not apply the HACCP yet and only 50.0% has some certification related to food safety. It was observed that the units that supply the most demanding markets tend to adopt these programs and their certification. The main internal benefits reported after the implementation of GMP/HACCP were reduction of food safety related problems and improvement of the level of training of production employees. As for external benefits, the most cited were improved brand image and customer satisfaction.
