Donkey milk powder production and properties compared to other milk powders

Abstract: In order to adapt the seasonal production of donkey milk to constant market demand, this study was aimed to define the project parameters of a pilot spray dryer for producing soluble milk powder from donkey milk concentrate. The concentrate (23% mean dry matter (wb)) was spray-dried using three different inlet air temperatures (120–150–185 °C). Both cow and goat milk were used as reference in the trials, and ascorbic acid was used as a chemical marker to evaluate thermal damage to the powder. The thermal damag… Show more

“…Less variability in ash content was observed, and values were similar to those reported by Coppola et al (2002). The high lactose content determined in this study was similar to that reported by Di Renzo et al (2013), Jirillo and Magrone (2014) and Gubic et al (2014), but it was higher than the content reported by Addo and Ferragut (2015). High lactose content is responsible for good palatability and facilitates the intestinal absorption of calcium that is essential for bone mineralisation in infants (Polidori and Vincenzetti 2012).…”

“…Regional and National guidelines specific to donkey dairy farming exist in Italy and Greece [ 12 ]. Holder pasteurization [ 21 , 22 ], spray drying [ 19 , 23 ], lyophilization [ 15 , 19 ] and, more recently, high-pressure processing [ 21 , 22 , 23 , 24 ] have been tested, and some of the resulting products can be found on the market, especially powders. Due to the increasing number of small dairy donkey farms in Italy, farmers need more sophisticated and reliable processing devices, in order to guarantee a safe product of high quality, and to increase their market share beyond the local region.…”
