Dry Ice as an Alternative Leavening Agent for Pancakes to Demonstrate Phase Transitions or Chemical Transformations

Abstract: A culinary exploration of the role of CO2 in leavening is described. This demonstration substitutes dry ice for chemical leaveners in order to achieve the same pancake fluffiness. Under the universal framework of food and cooking, we developed this activity to bring aspects of phase transitions and chemical transformations to a broad audience.

“…If the demonstration is for college students, they can work in groups to participate in the synthesis of polyaniline and further explore the factors affecting silver growth. Therefore, this project was not only treated as a “demonstration” but also an exploratory “activity” or “experimental exercise” for chemistry major students …”

“…There are documented disconnects between chemistry students’ experience outside and within the classroom space, and acids normally used in laboratory experiments are not familiar to the average student. In recent years, there have been a number of food experiments for the general chemistry laboratory. We hope to contribute to the food investigation space with an instructional tool that supports student discussion while providing instructors with resources to investigate class understandings. Misinterpretations are common among chemistry lab students, and the formation of connections between different forms of knowledge can be challenging .…”
