Effects of Antioxidants on the Anti-Oxidative Protection of Tengjiao(<i>Zanthoxylum schinifolium</i>) Oil

Abstract: The effects of different antioxidants on anti-oxidative protection of the Tengjiao (Zanthoxylum schinifolium) oil during its conservation were studied by Schaal-oven test according to the peroxide value(PV) and acid value(AV) of the oil. The results indicate that TBHQ and TBHQ+AP compound antioxidant, have good anti-oxidative protection on Tengjiao oil, the antioxidant activity of BHA+AP was the lowest, and citric acid exhibited great anti-oxidative protection and synergistic antioxidant effect.A positive inte… Show more

“…Tengjiao,a kind of Zanthoxylum schinifolium et Zucc, has a wide distribution in southwest China,and Chinese use it for a long history [1].The fresh fruit which has a special aroma and pharmacological action is used as traditional Chinese medicine and condiment [2].Since hundreds of years ago,the local residents produced the Tengjiao oil,using hot plant oil extract the effective components from the fresh fruit, to preserve the special aroma and pharmacological effect [3]. It is founded that acid value and peroxide value greatly affect the Tengjiao oil quality, and tertiary butylhydroquinone (TBHQ) have good anti-oxidative protection on Tengjiao oil, it is better than butyl hydroxy anisd (BHA) or ascorbyl palmitate (AP);and citric acid exhibited great anti-oxidative protection and synergistic antioxidant effect.A positive interaction was found between TBHQ and AP, TBHQ(0.02%) and TBHQ(0.01%)+AP(0.01%) have the same antioxidant activity on the Tengjiao oil [4].
