Entomophagy and Public Health: A Review of Microbiological Hazards

Abstract: The world population's constant increase and the continuous need to ensure food safety and security are among the major challenges to be faced in the next 30 years. In addition, human diet is evolving with a decreased inclusion of proteins from animal sources.
