Estimation of 2,5‐dimethyl‐4‐hydroxy‐3(2H)‐furanone (FURANEOLA®) in cultivated and wild strawberries, pineapples and mangoes

Abstract: The amount of FURANEOLA® in strawberries, pineapples, and mangoes has been determined by quantitative gas chromatography after ethyl ether extraction of the fruits.

“…The use of direct liquidÈsolid extraction (ie celite mixed with the fruit homogenate in order to absorb solid materials) to determine three strawberry furanones has recently been reported (Sanz et al 1994), whereas solvent extraction (ie volatiles extracted from the fruit homogenate with the aid of organic solvents) has been used extensively (Tressl et al 1969 ;Pyysalo et al 1979 ;Pickenhagen et al 1981 ;Schreier and Drawert 1981 ;Hirvi and Honkanen 1982 ;Hirvi 1983). Supercritical Ñuid extraction (SFE) has also been compared to classical solvent extraction (Polesello et al 1993).…”

“…The Ñame ionisation detector (FID) is widely used as the GLC detector, because of its high sensitivity to different organic compounds present in strawberry Ñavour (Pyysalo et al 1979 ;Dirinck et al 1981 ;Pickenhagen et al 1981). Mass spectrometry as a GLC detector is a powerful tool for the identiÐcation and structure elucidation of aroma compounds from strawberries (Pyysalo et al 1979 ;Dirinck et al 1981 ;Pe rez et al 1992).…”

“…In addition, the recovery rate of 2,5-dimethyl-4-hydroxy-3(2H)-furanone by steam distillation has been reported to be low because it is highly oxygenated. 13) As the weight loss ratio increased, part of the odorants in the crumb accumulated in the crust as they passed through, contributing to the crust aroma.…”

“…3 The sensory character of furaneol is strongly influenced by its concentration: at low levels, its odor is usually described as strawberry-like while at high concentrations it is characterized by a strong caramel-like odor. 8 Furaneol was also identified in grape. Rapp et al 9 identified for the first time HDMF in grapevine hybrids (Vitis labrusca, Vitis rotundifolia) characterized by strong strawberry-like notes.…”
