“…The moisture diffusivity (D eff ) of direct solar drying (8.43 × 10 −9 to 2.61 × 10 −8 m 2 s −1 ) was higher than the open sun drying (3.86 × 10 −11 to 1.10 × 10 −10 m 2 s −1 ). Cucumbers were dried using a direct-type solar dryer created by Elavarasan et al 13 It was shown that solar drying reduced the MC of dried cucumber from 93 to 12% in 7 h, whereas open sun drying required 11 h.
