Exploration of the Microstructure and Rheological Properties of Sodium Alginate-Pectin-Whey Protein Isolate Stabilized Β-Carotene Emulsions: To Improve Stability and Achieve Gastrointestinal Sustained Release

Abstract: Sodium alginate (SA)-pectin (PEC)-whey protein isolate (WPI) complexes were used as an emulsifier to prepare β-carotene emulsions, and the encapsulation efficiency for β-carotene was up to 93.08%. The confocal laser scanning microscope (CLSM) and scanning electron microscope (SEM) images showed that the SA-PEC-WPI emulsion had a compact network structure. The SA-PEC-WPI emulsion exhibited shear-thinning behavior and was in a semi-dilute or weak network state. The SA-PEC-WPI stabilized β-carotene emulsion had b… Show more

“…[31][32][33] Additionally, the ─OH characteristic peaks of PA7-Zn, PA10-Zn, and PA12-Zn exhibited a redshift, suggesting the presence of hydrogen bonding interactions involving ─OH groups or uncoordinated functional groups. [34,35] Compared with PA7-Zn, PA10-Zn and PA12-Zn, an absorption peak for C═O was detected in the PA2-Zn and PA4-Zn at 1650 cm −1 , [36,37] indicating the existence of PA on the Zn anodes. Different SEIs might be formed on the Zn surface under basic and acidic conditions.…”

“…The influence of HA concentration on the dynamic stability of the emulsion is shown in Figure 3 . The multiple-light-scattering method (Turbiscan Lab) was always used to test the stability of emulsion without damaging the sample [ 30 , 31 ]. In this method, the changes in back-scattering light (Δ BS ) were recorded to evaluate the small difference in opacity [ 31 ].…”

“…17 The rheological behavior observed for the WPAgstabilized emulsion/sodium alginate mixtures was in agreement with previous studies. 17,18 Ye et al 18 evaluated the effect of sodium alginate (0.8% w/w) /WPI (0.4% w/w) complexes on the rheological properties of β-carotene emulsions (1% w/w) using a power-law model. The mixture exhibited a shear-thinning behavior (n = 0.976, K = 0.037).…”
