“…In this study, through disruption of genes encoding enzyme involved in off-flavor compounds' production, the amounts of all three primary off-flavor compounds (acetaldehyde, diacetyl and pentanedione) in beer brewed with TYRL21 were reduced to a relatively lower level than that from the beer brewed with Y31, which would improve the taste of beer. Another significant aspect, beer flavor stability, which affects beer quality, is related to beer freshness (Back et al 2002) and anti-staling abilities (Mannarino et al 2008). During beer storage, oxidation causes the aging of beer, which goes on with a production of aldehyde compounds that is detrimental to beer flavor.…”
