Animal origin food product is quite vulnerable to the threat of chemical hazards. Mapping potential chemical hazards is needed to establish good and safe food handling methods. In addition, the mapping can be used as the basis for the preparation of food safety teaching materials that have not been available so far. The purpose of this study is to map various potential chemical hazards in food of animal origin food product to be used as teaching materials for food safety. This research is included as a literature study by collecting various types of scientific references that outline potential chemical hazards that can threaten animal origin food product. The results showed potential chemical hazards in the form of antibiotic residues in beef, chicken, and eggs; excess nitrates and nitrites in beef; scombrotoxin in cob fish; pesticides and heavy metals in honey; and formalin and borax in chicken meat and fish. The results of mapping the potential chemical hazards of animal origin food product can then be used to compile food safety teaching materials

Meatballs are one of the processed meat products that are in great demand by all levels of society. Along with the times and changes in public consumption trends, currently meatballs are turning into frozen food which is more simple and practical for cooking anytime. As processed frozen meat, making frozen food meatballs are often added with food additives (BTP) to maintain food quality such as preservatives, thickeners, and dyes. Borax is a dangerous chemical that is often added to food as a thickening agent. This study aims to determine and compare frozen food meatballs sold in modern markets and traditional markets in Palembang City which contain borax based on physical tests and to analyze borax levels using UV-Vis spectrophotometry. In this study, the maximum wavelength obtained to measure the absorbance of the 10 samples that have been prepared is 423,50 nm. Determination of the standard borax solution curve that has been made with various concentrations were 5 ppm, 10 ppm, 20 ppm, and 30 ppm. The obtained linear equation y = 0,0352x + 0,2047 with coefficient correlation (r) 0,9631. The levels of borax contained in the frozen food meatballs as the research samples were sample A contained 13,322 µg/ml, sample B contained 9,392 µg/ml, sample C contained 12,688 µg/ml, sample D contained 23,379 µg/ml, sample E contained 29,127 µg /ml, sample F was 24,821 µg/ml, sample G was 17,583 µg/ml, sample H was 15,595 µg/ml, the sample I was 26,665 µg/ml, sample J was 12,460 µg/ml. Based on physical tests, the characteristics of frozen food meatballs containing borax showed a brighter color, an unnatural smell, very chewy, and hard texture that is difficult to destroy. In conclusion, the ten samples of frozen food meatballs tested all contained borax with varying levels.

“…Namun organ yang paling terpengaruh dengan adanya boraks adalah ginjal karena berkaitan dengan sistem ekskresi (Saparinto dan Hidayati, 2006). Efek toksik yang dapat ditimbulkan boraks adalah gangguan proses reproduksi, iritasi lambung, gangguan ginjal, gangguan hati, gangguan testis, gangguan otak, demam, anuria, koma, gangguan sistem saraf pusat, apatis, depresi, sianosis, tekanan darah rendah, kematian, anoreksia, muntah, diare, anemia dan kejang-kejang (Sari et al, 2021) Faktor penghambatnya adalah para siswa sebelum sosialisasi / penyuluhan banyak yang belum banyak tahu tentang BTP yang aman serta belum terjun langsung untuk bekerja di industri pangan, sehingga harus dimotivasi secara rutin, berkesinambungan dan terpola. Kendala lain yang ditemui saat kegiatan PKM adalah tidak semua siswa dapat mengikuti kegiatan PKM secara penuh sehingga sampai terlewat tidak presensi sehingga data pre dan post test tidak sama, sehingga data yang dipakai adalah data yang lengkap siswa mengikuti sejak awal dan mengkuti secara menyeluruh materi yang disampaikan termasuk pretest dan postest.…”

Sosialisasi tentang keamanan pangan dan bahan tambahan pangan (BTP) sangat tepat dilakukan untuk meningkatkan pemahaman bagi siswa-siswi SMK Negeri 6 Kendal Kabupaten Kendal karena salah satu tujuan SMK Negeri 6 Kendal adalah menyiapkan lulusan yang trampil dan siap kerja dibidang keahliannya. SMK Negeri 6 Kendal Kabupaten Kendal merupakan SMK yang mempunyai jurusan Agribisnis Pengolahan Hasil Pertanian (APHP), dimana industri pangan merupakan bidang yang sejalur dengan bidang kerja para lulusannya. Kegiatan ini bertujuan untuk memberikan informasi berupa sosialisasi untuk meningkatkan pemahaman dan keamanan pangan bahan tambahan pangan yang aman bagi siswa SMK Negeri 6 kendal Kabupaten Kendal,Jawa Tengah. Kegiatan sosialisasi telah dilaksanakan hari Senin 25 April 2022 diikuti oleh 31 siswa-siswi SMK Negeri 6 Kendal dengan 3 topik, yaitu Keamanan Pangan, Bahan Tambahan Pangan (BTP) dan aspek keamanan terkait regulasi, dan takaran (numerik, CPPB, ADI), aplikasi dan fungsi BTP, pemahaman BTP impor terutama makna dan pronunciation serta praktek identifikasi senyawa boraks pada produk daging (bakso). Berdasarkan kegiatan yang telah dilakukan, maka dapat disimpulkan bahwa kegiatan sosialisasi ini dapat meningkatkan pemahaman siswa-siswi jurusan APHP-SMK Negeri Negeri 6 Kendal tentang keamanan pangan dan bahan tambahan pangan yang aman sesuai regulasi.
