Identifikasi Kualitas Beras Putih (Oryza sativa L.) Berdasarkan Kandungan Amilosa dan Amilopektin di Pasar Tradisional dan “Selepan” Kota Salatiga

Abstract: AbstrakKualitas beras dapat dipengaruhi dari karakteristik kimiawi yang berbeda seperti kandungan amilosa dan atau amilopektin. Penelitian ini bertujuan untuk mengindentifikasi kualitas beras berdasarkan kandungan amilosa dan amilopektin pada berbagai varietas beras putih di pasar tradisional dan "selepan" daerah Kota Salatiga dan sekitarnya.
