Improvement of the Methods of Calculation of Rheological Characteristics of Resilient-Elastic Environments by the Penetration Method

Abstract: In this work the methods of calculation of limiting pressure of the displacement for resilient-elastic environments for the whole muscle beef for the use of different constants of cones are founded. Measurements of the size of penetration are carried out with the dynamic penetrometer in different periods of autolysis.
