This study aims to compare the data on chemical characteristics (protein content, fat, ash, moisture, Free Fatty Acid (FFA), Thiobarbituric Acid (TBA), and total energy) of commercial skin crackers made from various kinds of animal skin. Four categories of commercial animal skin crackers from the same producer were assigned as treatments, including cowhide crackers, buffalo askin crackers, fish skin crackers, and chicken skin crackers. The data showed that the type of animal skin as the raw material for crackers had a significant effect on the levels of protein, fat, ash, free fatty acid value, and total energy of the final product. However, the type of animal skin did not significantly affect of moisture content of the product. The highest protein content was shown in cowhide crackers and buffalo skin crackers, where cowhide crackers also showed the lowest fat content and free fatty acid value but high ash content (p<0.05). Descriptively, the thiobarbituric acid value of cowhide crackers is also low. Meanwhile, the highest total energy was owned by chicken skin crackers (p<0.05). Thus, among commercial animal skin crackers products, cowhide crackers have the best chemical characteristics because they contain higher protein and ash with a lower fat content, free fatty acid value, thiobarbituric acid value, and total energy so they can be recommended as a quality.

Ducks are one of the sources of income for farmers in the Lebak swamp area, South Kalimantan. Duck rearing is one of the prospective ducks farming activities. The study aims to determine the analysis of Alabio ducks rearing business with herbal medicine supplementation. Due to the high prevalence of disease attacks, herbal medicine supplementation was given to ducks to boost their immune systems. The research was carried out in Sungai Durait Hulu village, Babirik subdistrict, Hulu Sungai Utara (HSU) Regency in April-December 2019. A total of 700 female Alabio ducks were used as samples with a mixed rearing system (intensive system for ducks aged 1-30 days; semi-intensive for ducks aged 1-5 months), and a 5-month of observation period. The parameters observed were production parameters, mainly duck mortality and/or loss, and economic parameters to determine business feasibility. The herbal medicine supplementation significantly affected immune systems, as shown by a lower mortality rate (30%) for ducks with herbal medicine supplementation compared to ducks without herbal medicine supplementation (50%). Duck rearing in this area was feasible and profitable which shown by R/C values were greater than one for both groups of ducks, namely 1.84 and 2.28 for ducks without and with herbal medicine supplementation, respectively.

Sentra Foods merupakan IKM yang berada di Kabupaten Pinrang yang fokus usaha pada pengolahan aneka bakso frozen, nugget, abon ikan, mie sehat, dan aneka sambel. Selain itu juga Sentra Foods memberikan pelatihan keterampilan dan keahlian dalam pengolahan hasil pertanian dan perikanan sehingga masyarakat dapat berwirausaha sehingga membantu finansial masyarakat itu sendiri. Dalam pengolahan produk makanan frozen ini tentunya akan menghasilkan limbah. Salah satu limbah produksi yang belum dikelolah adalah kulit ayam. Kulit ayam sendiri untuk diolah menjadi produk makanan akan berdampak pada kesehatan karena tingginya kandungan lemak yang dimiliki. Olehnya itu limbah kulit ayam diolah menjadi produk yang lebih berguna dan tidak mengganggu kesehatan. Salah satu yang bisa dilakukan adalah pengolah kulit ayam menjadi sabun cair. Kulit ayam dipanaskan dengan menggunakan panji bertekanan selama 30 menit kemudian minyak yang dihasilkan ditambahkan dengan kalium hidrosida (KOH) untuk proses saponifikasi sehingga menjadi sabun cair yang dapat dimanfaatkan dalam kehidupan sehari-hari.
