Kinetics of Thermal‐Degradation of Betanins: A Teaching Mini‐Project for Undergraduates Employing the Red Beet

Abstract: A 4-week mini-project is proposed for an experimental Physical Chemistry course applied in Food Science training. Activities include preparation of beet extract for the extraction of betanins and analysis of the kinetics of betanins in thermal degradation at three temperatures (60, 70, and 80 ºC). In addition to developing common laboratory routines (for example, dilution and use of the UV-Vis spectrophotometer), students will have contact with the usual procedure for evaluating use of natural dyes in the food… Show more

“…Table 1 shows that the learning outcomes presented in the course of the activity are compatible with miniprojects for teaching with a similar execution time. [6][7][8][9][10]23 In the first week, the presentation and leveling of the students in the basic concepts that will be worked on was performed. For this, a single meeting lasting 4 h is usually sufficient.…”

“…Engineering courses, due to their design, are excellent for promoting students’ reflection on the optimization of sustainable attitudes . Our research group has been producing and testing chemical miniprojects for applied teaching in engineering courses, and we observe that this type of pedagogical proposal reflects positively on the teaching–learning process of the students. The use of sludge from a domestic effluent treatment plant (DETP) presents possibilities for our proposal to develop miniprojects for teaching sustainability.…”
