Kombucha: Fisikokimia dan Studi Kritis Tingkat Kehalalan

Abstract: Kombucha merupakan salah satu minuman fungsional yang memiliki aktivitas biologis seperti antioksidan, antimikrob, antidiabetes dan antiinflamasi yang dihasilkan melalui proses fermentasi teh dan gula dengan menggunakan kultur starter kombucha yang disebut dengan SCOBY (Symbiotic culture of bacbteria and yeast).
