“…Addition of lecithin or Tween 80 (two sources of unsaturated fatty acids) in culture medium during S. carlsbergensis in sequential-batch culture without aeration increased the viability of this yeast from 70 to 100% (Thompson and Ralph 1967). Esterified fatty acids and in particular oleie acid act after their enzymatic liberation (Wheeler and Rose 1973;Panchal and Stewart 1980) as growth factor (Lands and Graff 1980). The inhibition of foaming during the three fermentation cycles indicated the excellent antifoam action of the various PAG tested, taking into account the low concentration used.…”
