Microbial Community Variations and Bioconversion Improvements during Soybean-Based Fermentation by Kefir Grains

Abstract: Soybeans possess unexpected flavors and are difficult to be absorbed by the gastrointestinal tract. Kefir grain fermentation provides diverse strains and bioactive compounds, which may enhance flavor and bioaccessibility.
