Microbial flora of technological interest in raw ovine milk during 6°C storage

Abstract: Changes in the microbial flora of ovine milk of medium hygienic quality (initial mean total plate count 3.3 × 105 cfu/mL) were studied throughout refrigerated storage at 6°C. Total plate counts after 48 h of refrigerated storage (mean count 4.6 × 105 cfu/mL) were under the current standards in the European Union (EU) for raw ovine milk to be used for cheesemaking after heat treatment. However, after 96 h, mean total plate counts (1.6 × 107 cfu/mL) were above the standards. Lactococci were found at levels highe… Show more

“…No significant changes of total plate counts were observed at 0 and 96 h during the storage. According to the report by Sanjuan, Rua, and Armesto (2003), a log increase in total plate count after 96 h of incubation was observed in ovine milk, which differs from our results. A relatively low initial proportion of psychrotrophic flora in the total microflora of donkey milk could affect the results.…”

“…The mean value of total mesophilic count was 6.09 ± 0.25 log cfu ⁄ mL. The values found in the present study were comparable with those reported by different authors for ewe's milk (Muehlherr et al 2003;Sanjuan et al 2003;Scintu et al 2007), and met standards laid down by EU Regulations (EEC, 1992;EC 2006).…”

“…Culturing the indigenous microflora of raw ovine milk suggested that lactococci comprise a dominant population in fresh milk, including being more prevalent than Pseudomonas (Sanjuan et al, 2003). Similarly, raw bovine milk contained a more diverse microbiota when fresh, with lactococci and streptococci being the dominant genera (Raats et al, 2011).…”
