Meat discoloration, lipid oxidation, and undesirable texture are inevitable phenomena in basa fish fillets during storage, which in turn limits their exportation as well as decreases consumer acceptability. In addition, increasing consumers’ requirements for high-quality, minimally processed, and ready-to-cook fish fillets with an extended shelf-life is a great challenge, particularly with lifestyle changes. Accordingly, this study aimed to improve the quality, lipid stability, fatty acid profile, and lipid nutritional quality indices (LNQI) of basa fish fillets during chilling storage at 4 °C for 15 days using pepsin enzyme (E, 0.1%), rosemary oil (R, 0.5%), citric acid (CA, 0.5%), and their combination (0.1% E + 0.5% R; 0.1% E + 0.5% CA; and 0.1% E + 0.5% R + 0.5% CA). Our results revealed that all treated samples exhibited a significant increase in protein content, a significant decrease in fat content, and a marked reduction in pH, total volatile base nitrogen (TVBN), thiobarbituric acid (TBA), free fatty acids, and shear force (SF) values in comparison to control ones. Moreover, significant improvements in sensory scores, color stability, fatty acid profile, LNQI, and microbial quality of all treated samples were observed. Such findings were more pronounced in samples treated with a mixture of pepsin, rosemary, and citric acid (TVBN: 2.04 vs. 6.52 mg%; TBA: 0.40 vs. 2.68 mg malonaldehyde/Kg; and SF: 8.58 vs. 19.51 Kgf). Based on the obtained results, there was an extension for the shelf life of all treated basa fish fillet samples, especially in samples treated with a mixture of pepsin, rosemary, and citric acids when compared with the control samples (˃15 days versus 10 days). Additionally, eucalyptol, camphor, isoborneol, and α-pinene are the main components of rosemary, with great antioxidant and antimicrobial activity. In conclusion, the mixture of pepsin, rosemary, and citric acid can be applied easily in the seafood industry and at the household level to provide ready-to-cook fish fillets of high quality with great health benefits.

Currently, special attention is paid to the study of the effectiveness of the immobilization method—microencapsulation. The aim of the research is to obtain a complex enzyme preparation from pepsin and papain by sequential microencapsulation of enzymes in a pseudo-boiling layer and to evaluate its tenderizing effect on pork. The objects of research were enzymes: pepsin and papain, which were microencapsulated in a protective coating of maltodextrin. It was found that the biocatalytic activity of the complex enzyme preparation is higher than that of pure enzymes. Microencapsulation allows maintaining the high proteolytic activity of enzymes for a long storage period. It has been shown that the thickness of the protective layer during microencapsulation of pepsin and papain in the pseudo-boiling layer of maltodextrin should be in the range of 4–6 microns. During the research, the physicochemical properties of pork were studied depending on the duration of fermentation. It was found that the maximum activity of immobilized enzymes is shifted to the alkaline side. Pork salting with the use of a microencapsulated enzyme preparation in the brine increases the water-binding capacity of proteins to a greater extent in comparison with brine with pure enzymes. The presented data show the high efficiency of sequential microencapsulation of the enzyme pepsin and then papain into a protective layer of maltodextrin in order to preserve their activity during storage.

Peptides are biologically active. This quality depends on the technological modes of protein hydrolysis. The research objective was to isolate peptides from the bursa fabricii and evaluate their immunotropic effect on mice of various lines with experimental immunodeficiency and the morphofunctional state of their immunopoiesis organs, i.e., thymus and spleen. The research featured bursa fabricii hydrolysate and peptides, as well as thymus and spleen of male mice. Amine nitrogen was determined according to State Standard R 55479-2013; molecular weight of peptides was determined by gel electrophoresis. The morphometry of the thymus and spleen was calculated using VideoTesT-Morphology 5.0. The research revealed the rational modes of enzymatic hydrolysis of the bursa fabricii protein by papain with subsequent isolation of peptides by ultrafiltration. According to the content of amine nitrogen in the bursa fabricii hydrolysate, the rational concentration of the papain enzyme was 0.15%. The molecular weight of peptides after ultrafiltration of bursa fabricii hydrolysate through membranes with a 43 kDa permeability had different values and depended on the concentration of papain, hydrolysis time, and temperature. The maximal amount of 27–18 kDa peptides was isolated at 36°C (85%) when the concentration of papain was 0.15% (73%), the hydromodule was 1:3 (78%), and the hydrolysis time of the raw material was 6 h (82%). The rational technological parameters of the hydrolysis of the bursa fabricii protein were as follows: concentration of papain – 0.15%, temperature – 36°C, hydromodule – 1:3, and hydrolysis time – 6 h. In immunodeficient mice, bursal peptides prevented a decrease in total cellularity in the thymus, sustained the content of CD3+ cells, activated the maturation of T-lymphocytes and proliferation of B-lymphocytes, and reduced the immunocytotoxic effects of cyclophosphamide. The article offers a new technology for obtaining peptides with a pronounced immunotropic effect that can be used in functional food production.
