Molecular Species Compositions of Intramuscular Triacylglycerols of Porcine Muscles

Abstract: acid and molecular species compositions of triacylglycerols among three kinds of muscles. The major fatty acids of intramuscular triacylglycerols were palmitic acid (C16:0), stearic acid (C8:0) and oleic acid (C18:1) where C18:1 had the highest concentration. The major molecular species of intramuscular triacylglycerols were dipalmitoyl (PP)-oleoyl (O)-glycerol (PPO) and P-stearoyl (S)-O-glycerol (PSO), POO and P-O-linoleoyl (L)-glycerol (POL). POO had the highest concentration in these molecular species.
