“…Natamycin is mostly incorporated as a polymer on the contact surface of dairy products. Due to its low solubility, it inhibits yeast growth by binding specifically to ergosterol in the yeast cells without permeabilizing the yeast plasma membrane [ 24 , 31 , 32 ].
