“…Both protocatechuic acid and caffeic acid have carboxyl groups on the benzene ring which can easily chelate metal ions thus inhibiting the activity of enzymes associated with browning reactions. Caffeic acid derivatives not only possess antioxidant activity but also exhibit tyrosinase activity (Pantoja Pulido, Colmenares, Dulcey, & Isaza, ). From previous studies, the protocatechuic acid and caffeic acid may also enhance the antioxidant activity and inhibit the tyrosinase activity (Figure b) in the study; thus the high protocatechuic acid and caffeic acid levels of treated slices may help to preserved the good quality during the storage periods.…”

“…The same role can be attributed to other alkaloids, caffeoylquinic acid, and 1,4-Dicaffeoylquinic acid derivatives, having a well-known antioxidant activity [ 37 ]. Moreover, 1,4-Dicaffeoylquinic acid has significant polarizability of 50.16 Å 3 , which may further facilitate NS synthesis [ 38 ].…”

“…Caffeic acid has a low molecular weight of 180.16 g/mol with high solubility of 1.16 mg/mL and a small topological polar surface area of 77.8 Å 2 , which may be the cause of its quicker activation during a reaction conducted in 65 °C [36]. The same role can be attributed to other alkaloids, caffeoylquinic acid, and 1,4-Dicaffeoylquinic acid derivatives, having a well-known antioxidant activity [37].
