Non-Alcoholic Beverages from Sprouted Buckwheat: Technology and Nutritional Value

Abstract: Plant-based soft drinks are a relatively new product category. Germinated, or sprouted, buckwheat (Fagopyrum esculentum Moench.) can be used as a raw material in functional beverages.
