In this study, the chemical and sensory profiles of 42 different nonalcoholic beer (NAB) brands/styles already on the global market and produced through several different brewing techniques were evaluated. A trained panel (i.e., 11 panelists) performed standard-driven descriptive and check-all-that-apply analyses in triplicate to sensorially characterize the aroma and taste/mouthfeel profiles of 42 commercial NABs, a commercial soda, and a commercial seltzer water ( n = 44). These beers were also chemically deconstructed using several different analytical techniques targeting volatile and nonvolatile compounds. Consumer analysis ( n = 129) was then performed to evaluate the Northern Californian consumer hedonic liking of a selection ( n = 12) of these NAB brands. These results provide direction to brewers and/or beverage producers on which techniques they should explore to develop desirable NAB offerings and suggest chemical targets that are indicators of specific flavor qualities and/or preference for American consumers.

Özet 4857 sayılı İş Kanunu'nda iş güvencesi kurallarının ve özellikle de işe iade davasının sonuçlarının düzenleniş şeklinin sonucu olarak, iş güvencesi ile amaçlanan feshe karşı korumanın sağlanmasında, tarafların dava sonucunda ortaya çıkan hükmü takip eden davranışları belirleyici olmaktadır. Özellikle, tarafların bu davranışlarında, dürüstlük kuralına uygun davranıp davranmadıklarının denetimi önemlidir. Bu bağlamda, öncelikle, İş Kanunu'nda iş güvencesinin genel olarak düzenleniş şekli, tanımı, amaçları, koşulları ve uygulanışı ele alınacaktır. Daha sonra, iş güvencesi kapsamında, feshe itiraz usulü ve sonuçları incelenecektir. Zira, feshe itiraz sonucunda ortaya çıkan yargı kararı niteliği gereği tek başına iş güvencesinin sonuçlarını doğurmamakta, taraflara bazı yükümlülükler yüklemektedir. Bu yükümlülükler dahilinde, uygulamada, işçi ve işverenin işe iade kararı üzerine yerine getirmeleri gereken başvuru, işe davet ve işe başlatma şartlarının gerçekten bu yöndeki iradelerini yansıtıp yansıtmadığı, feshin geçersizliğinin tespiti üzerine, işçi lehine sonuçların doğması bakımından ele alınmaktadır. Yargı kararlarında "samimiyet" olarak yer alan bu durum, bu çalışmada, çeşitli olasılıklara ilişkin kararlar ve öğretideki yaklaşımlar dahilinde incelenecektir. İşçinin başvurusunun samimiyeti, işverenin işe davetinin samimiyetiyle bağlatılı olduğu gözetilerek ele alınacaktır.

“…Biological processing includes arrested fermentation, use of special yeasts and altered mashing processes ( Branyik, Silva, Baszczynski, Lehnert, & Silva, 2012 ). Physical processing can include thermal processes, such as rectification or thin film evaporation, whereas membrane processes can include dialysis, osmotic distillation, pervaporation, nanofiltration (NF) and reverse osmosis (RO) ( Blanco et al, 2016 , Branyik et al, 2012 , Güzel et al, 2020 ). In a comprehensive review on NAB production, Branyik et al (2012) found that all techniques produced significant losses in volatiles, however RO seemed to show the smallest change, with further encouraging results found from other researchers when dealcoholizing beer, wine and cider ( Alcantara et al, 2016 , Catarino et al, 2007 , Catarino, 2010 , Gil et al, 2013 , Lopez et al, 2002 , Pilipovik and Riverol, 2005 ).…”

Highlights Reverse osmosis results in significant losses in volatile compounds and modified sensory profiles. Volatile losses appear to be related to compound structure, not compound size. Reverse osmosis efficiency varies between beer styles, with longer processing times for stouts. Reverse osmosis membranes are susceptible to fouling over time, affecting overall product quality.
