This paper sought to evaluate the behavior of an upflow Anaerobic-Aerobic Fixed Bed Reactor (AAFBR) in the treatment of cattle slaughterhouse effluent and determine apparent kinetic constants of the organic matter removal. The AAFBR was operated with no recirculation (Phase I) and with 50% of effluent recirculation (Phase II), with θ of 11h and 8h. In terms of pH, bicarbonate alkalinity and volatile acids, the results indicated the reactor ability to maintain favorable conditions for the biological processes involved in the organic matter removal in both operational phases. The average removal efficiencies of organic matter along the reactor height, expressed in terms of raw COD, were 49% and 68% in Phase I and 54% and 86% in Phase II for θ of 11h and 8h, respectively. The results of the filtered COD indicated removal efficiency of 52% and k = 0.0857h -1 to θ of 11h and 42% and k = 0.0880h -1 to θ of 8h in the Phase I. In Phase II, the removal efficiencies were 59% and 51% to θ of 11h and 8h, with k = 0.1238h -1 and k = 0.1075 h -1 , respectively. The first order kinetic model showed good adjustment and described adequately the kinetics of organic matter removal for θ of 11h, with r 2 equal to 0.9734 and 0.9591 to the Phases I and II, respectively. DESEMPENHO DE UM REATOR ANAERÓBIO-AERÓBIO E ESTUDO CINÉTICO DE REMOÇÃO DE MATÉRIA ORGÂNICA DE EFLUENTE BOVINORESUMO: O objetivo deste estudo foi avaliar o desempenho de um Reator Anaeróbio-Aeróbio de Leito Fixo (RAALF) com escoamento ascendente, no tratamento de efluente bruto de matadouro bovino, e obter constantes cinéticas aparentes da remoção de matéria orgânica. O RAALF foi operado sem recirculação (Etapa I) e com 50% de recirculação do efluente (Etapa II), com θ de 11 h e 8 h. Em termos de pH, alcalinidade a bicarbonato e ácidos voláteis, os resultados indicaram que o RAALF apresentou capacidade em manter condições favoráveis para os processos biológicos envolvidos na remoção de matéria orgânica, em ambas as etapas operacionais. As eficiências médias de remoção de matéria orgânica ao longo da altura do reator, expressa em termos de DQO bruta, foram de 49% e 68% na Etapa I e de 54% e 86% na Etapa II, para θ de 11 h e 8 h, respectivamente. Os resultados de DQO filtrada indicaram eficiências de remoção de 52% e k = 0,0857 h -1 para θ de 11 h e 42% e k = 0,0880 h -1 para θ de 8 h na Etapa I. Na Etapa II, as eficiências de remoção foram 59% e 51% para θ de 11 h e 8 h, com k = 0,1238 h -1 e k = 0,1075 h -1 , respectivamente. This review article addresses wastewater treatment methods in the red meat processing industry. The focus is on conventional chemicals currently in use for abattoir wastewater treatment and energy related aspects. In addition, this article discusses the use of cleaning and sanitizing agents at the meat processing facilities and their effect on decision making in regard to selecting the treatment methods. This study shows that cleaning chemicals are currently used at a concentration of 2% to 3% which will further be diluted with the bulk wastewater. For example, for an abattoir that produces 3500 m 3 /day wastewater and uses around 200 L (3%) acid and alkaline chemicals, the final concentration of these chemical will be around 0.00017%. For this reason, the effects of these chemicals on the treatment method and the environment are very limited. Chemical treatment is highly efficient in removing soluble and colloidal particles from the red meat processing industry wastewater. Actually, it is shown that, if chemical treatment has been applied, then biological treatment can only be included for the treatment of the solid waste by-product and/or for production of bioenergy. Chemical treatment is recommended in all cases and especially when the wastewater is required to be reused or released to water streams. This study also shows that energy consumption for chemical treatment units is insignificant while efficient compared to other physical or biological units. A combination of a main (ferric chloride) and an aid coagulant has shown to be efficient and cost-effective in treating abattoir wastewater. The cost of using this combination per cubic meter wastewater treated is 0.055 USD/m 3 compared to 0.11 USD/m 3 for alum and the amount of sludge produced is 77% less than that produced by alum. In addition, the residues of these chemicals in the wastewater and the sludge have a positive or no impact on biological processes. Energy consumption from a small wastewater treatment plant (WWTP) installed to recycle wastewater for a meet facility can be around $500,000.

Agroindustries are major consumers of water. However, to adapt to environmental trends and be competitive in the market, they have sought rational use of water through water management in their activities. Cleaner Production can result in economic, environmental and social benefits, and in actions that promote reduction in water consumption. This case study was conducted in a slaughterhouse and poultry cold storage processing plant and aimed to identify points of excessive water consumption, and to propose alternatives for managing water resources by reducing consumption. Consumption data are presented in relation to the processing stages with alternatives proposed for the rational use of water, such as closure of mains water during shift changes. Following the implementation of recommendations, a reduction in water consumption of approximately 11,137 m 3 per month was obtained, which equates to a savings of US$ 99,672 per year. From this study, it was concluded that the company under review could develop various improvement actions and make an important contribution to the preservation of water resources in the region where it operates. Entretanto, para se adaptarem às tendências ambientais e manterem-se competitivas no mercado, elas têm que trabalhar com o uso racional da água através da gestão hídrica em suas atividades. A Produção Mais Limpa pode possibilitar benefícios econômicos, ambientais e sociais, incluindo ações que promovam a redução no consumo de água. Este estudo de caso foi conduzido em um frigorífico de frango e teve por objetivo identificar pontos de consumo excessivo de água e propor alternativas de gestão das fontes de água através da redução do consumo. Os dados de consumo de água aqui apresentados estão relacionados às etapas de processo, com ênfase nas alternativas de uso racional da água, como fechamento das torneiras durante as trocas de turno. O uso das medidas propostas possibilitou a redução no consumo de água de, aproximadamente, 11.137 m 3 por mês, o que equivale a uma economia de US$ 99.672 por ano. A partir deste estudo, foi possível verificar que a empresa em questão pode desenvolver ações simples que resultam em importantes contribuições para a preservação das fontes de água na região onde está inserida.
