“…The mechanism of interaction appears to be closely linked to sugar structure [ 45 ]. Punitha et al (2014) found there were strong molecular interactions between the studied sugars (sucrose, fructose and lactose) and 0.4 M HPMC solutions and that the strength of the interaction was related to the sugar concentration. FTIR studies showed lactose formed the strongest bonds with HPMC due to reduced steric hindrance compared to other sugars allowing strong hydrogen bond formation.…”
