Potential impacts of bioprocessing of sweet potato: Review

Abstract: Sweet potato (Ipomoea batatas L.) is among the major food crops in the world and is cultivated in all tropical and subtropical regions particularly in Asia, Africa, and the Pacific. Asia and Africa regions account for 95% of the world's production. Among the root and tuber crops grown in the world, sweet potato ranks second after cassava. In previous decades, sweet potato represented food and feed security, now it offers income generation possibilities, through bioprocessing products. Bioprocessing of sweet po… Show more

“…Each component of this multi-faceted system might require varying levels of water inputs and will have varying cost and benefit implications. In terms of sweet potato, researchers have claimed that the diversification and advances in the technology applied to its production have been considerable in the last decades leading to a myriad of opportunities, from energy production to providing raw material for starch, flour, juice, bread, liquors, pigments, candy, and various uses in the cosmetic industry, etc., [117].…”

“…It is considered the 7th most essential staple food crop in the world with reference to production [19]. Sweet potato is cultivated extensively and consumed in tropical and subtropical regions specifically in Sub-Sahara Africa, East Asia, and the Pacific Islands [20,21] with about 95% of the production mainly from Asia and Africa [22]. Globally, Ipomoea batatas is considered as a major staple crop especially in developing countries [23].…”
