Increasing protein demand has led to growing attention being given to the full utilization of proteins from side streams in industrial fish processing. In this study, proteins were recovered from three protein-rich side streams during Tra catfish (Pangasius hypophthalamus) processing (dark muscle; head-backbone; and abdominal cut-offs) by an optimized pH-shift process. Physicochemical characteristics of the resulting fish protein isolates (FPIs) were compared to industrial surimi from the same raw material batch. The pH had a significant influence on protein extraction, while extraction time and the ratio of the extraction solution to raw material had little effect on the protein and dry matter recoveries. Optimal protein extraction conditions were obtained at pH 12, a solvent to raw material ratio of 8, and an extraction duration of 150 min. The resulting FPI contained <10% of the fat and <15% of the ash of the raw material, while the FPI protein recovery was 83.0–88.9%, including a good amino acid profile. All FPIs had significantly higher protein content and lower lipid content than the surimi, indicating the high efficiency of using the pH-shift method to recover proteins from industrial Tra catfish side streams. The FPI made from abdominal cut-offs had high whiteness, increasing its potential for the development of a high-value product.

Vietnam is paying great to the seafood exporting sector, offering various significant production advantages, concluding that it is critical to understand the competitiveness of the target market and implement effective strategies. However, due to COVID 19, the value of Vietnamese pangasius exports resulted in low and unpredictable profits for pangasius farmers. It is obvious to recognize competitiveness as Multi-Criteria Decision Making (MCDM) problem in the uncertain business environment. Therefore, this study is the first to propose a two-staged Partial Least Squares-Structural Equation Modeling (PLS-SEM) and Fuzzy Analytic Hierarchy Process (FAHP) analysis to identify potential criteria and comprehensively investigate the competitiveness of Vietnamese pangasius export Small and Medium-sized Enterprises (SMEs) in the context of China market. First, a dataset of 186 valid respondents from seafood export SMEs was collected through an online survey from June to December 2020. The PLS-SEM approach was applied to ascertain the positive impact of the proposed criteria contributing to the competitiveness of Vietnamese pangasius against China market. The PLS-SEM results showed that all criteria strongly correlated with the pangasius exporting competitiveness. Then, the FAHP method is employed to rank the subjective weights of mentioned criteria based on 12 experts' judgments. Knowledge infrastructure (C3) has the highest rank of competitiveness criteria with the highest weight, followed by Product (C4). In contrast, Prices (C6) was indicated as the lowest rank at 0.107 regarding FAHP results. Furthermore, this study provides insights into stakeholders seeking to improve competitiveness performance.

In spite of vast diverse fish genetic resource of India, several exotic species have been introduced into India. Chinese carps which were introduced in India with an objective of increasing the yields in aquaculture has paved way for composite fish culture in India. Introduction of exotic species for fisheries and aquaculture was successful in some instances while in few situations, it failed leading to controversy over protection of native biodiversity. Pangasius (Pangasianodon hypophthalmus) an exotic species has been introduced into India and is not only adopted for culture in states like West Bengal and Andhra Pradesh but also established as an alternative candidate species in freshwater aquaculture. Fish seed production segment in West Bengal played a pivotal role in the expansion of Pangasius farming in Andhra Pradesh. Pangasius monoculture was found to be profitable in comparison to polyculture with carps and other fishes. Use of formulated feeds is the major choice of Pangasius farmers. Pangasius catfish is less prone to diseases when compared to carps and is sensitive to abiotic stress. Comparatively, low market value of Pangasius than carps has increased avenues of fish consumption by low income consumers. Very fast development in culture of Pangasius has created many challenges such as dearth of quality seed, inconsistent management practices, prevalence of stress induced diseases, glut in the market and acute decline in the farm gate price leading to stabilization of farming area in Andhra Pradesh. Pangasius farming in Andhra Pradesh is sustaining due to strategic stocking and harvesting pattern adopted by the farmers conforming to market trend. Inappropriate practices in order to achieve higher yields and input-specific technical inefficiency are associated with the economic losses while minimizing the use of inputs can reduce risk factors in Pangasius farming. It is important to record that demand for carp culture in Andhra Pradesh is still greater in spite of less complications underlying in Pangasius farming and management.
