Production of Omega-3 Fatty Acids by Enzymatic Hydrolysis from Lemuru Fish By-Products

Abstract: Production of omega-3 fatty acids from lemuru fish by-products was studied by enzymatic hydrolysis using a lipase enzyme in one liter of the batch reactor. The hydrolysis temperature of fish oil was set at 45 to 55 ℃ for 0 to 24 h, whereas agitation from 50 to 150 rpm. RSM-Box Bhenken was used to study the effect of these parameters on omega-3 (EPA, docosahexaenoic acid (DHA), and α-linolenic acid (ALA)) content. The % free fatty acid (FFA), acid index, peroxide index, iodine index, and saponification index of… Show more

“…EPA content obtained in the urea complexed fraction was much higher than ALA and DHA. The total omega-3 (ALA, DHA, EPA) content of omega-3 concentrate obtained by the urea complexation method was higher (4.44%) than by the enzyme hydrolysis method (3.44%) obtained in the previous study [16]. PUFA concentrates of sardine oil were obtained by urea inclusion, and DHA and EPA showed the major fatty acids.…”

“…The quality of omega-3 is indicated by free fatty acids content, acidity value, and saponification index. The quality of omega-3 concentrate was compared with lemuru fish oil obtained in the previous study [16]. The data shows that the % FFA and acidity value of the omega-3 concentrate sample was much higher than the fish oil as the raw material.…”

“…Fish oil is the source for long-chain omega-3 fatty acids, particularly eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) containing unsaturated fatty acids [53]. The two fatty acids have been scientifically proven to impact human health positively [54]. Generally, high unsaturated fatty acid compounds with high levels of EPA and DHA come from seafood and freshwater, especially fish oil [55].…”

“…Response surface methodology (RSM) was carried out to determine the optimum conditions for the yield of crude protease production by SH2CR strain following the method of Kosasih et al [27] with some modifications. The Box-Behnken method was performed using three independent variables (time (X1), agitation (X2), and skim concentration (X3)).…”
