Profiles of sturgeon protein prepared by two methods and the correlation between protein fractions and functional properties

Abstract: Summary In order to find the potential functional components in sturgeon protein, the protein fractions and functional properties of sturgeon proteins (SP) prepared by two methods were investigated, including pH‐shift and subcritical dimethyl ether extraction (SDEE).
